Byakko Signature

4-year-old umeshu sake infused with Hingan plums.

Byakko 12-year
12-year-old Koshu sake, marked by notes of caramel and almond.

SHOCHU

Oshidori
Full-flavored barley shochu, aromas of honeydew and citrus with notes of soy and white pepper.

Byakko Barrel Aged Shochu
Barley and white koji aged undiluted in oak casks for three to five cycles.

Solitude
An incredibly rare shochu, inspired by one raen's 40 cycles of seclusion in the Koshu mountains.


WHISKEY

Byakko 12 Grain
Expertly blended from 12 local grain and malt whiskies for a uniquely Hingan experience.

Prowler
A golden single malt with soft fruit, vanilla, and clove on the nose that blooms into a buttery palate and finishes with sweet ginger and cinnamon.

Byakko Mizunara Whiskey
Pure malt matured in barrels of rare Hingan oak.

RUM

Harmony
Elegant and well-rounded, uses sugar cane grown in the Bukyo prefecture.




Byakko 21-Year
Moderately aromatic, lightly floral, hints of banana & pear. Soft clean finish.

SIGNATURE

Vin à frousfrous
Fermented from a cross of hybridized noble grapes, sweet alyssum, and sweet marjoram. The finishing process steeps the wine with windtea, giving it that signature purple hue. Dark, fragrant, and pleasantly dry.

Frousfrous Sangria
Vin à frousfrous mixed with a variety of bright citrus fruits and crisp fairy apples.


Pale Gold
A wine made of succulent and sweet white peaches.

Foxy Spritzer
Pale Gold mixed with a splash of ambrosial spring water and dressed with levin mint for an electric but refreshing spritzer.

Prunes de Lutin
A pixie plum liqueur, native to the Coerthas region.
